With bedding the rule is always: you get what you pay for. For longevity linen is the best because it’s made from the flax plant, which boasts a lovely rumpled finish — the more you wash it the softer it gets plus it absorbs moisture well (perhaps the only upside if you suffer from night sweats).
For a smarter, ironed look it’s best to go with cotton, which is soft on the skin and inviting. I bought a set of Peter Reed sheets about 20 years ago: simple white with a corded edge. They continue to be one of my favourites and are still in perfect condition. For more colourful iterations try Designers Guild and Society of Wanderers, an Australian brand that makes any bed look fabulous.
